Honestly, rice salad is always a minibish oldschool at first sight.
But I bet you know that: Sometimes we just get hungry for a very specific recipe. And I’m quite frank, if the cravings once there, then then I NEED THIS COURT. On my plate. Immediately. Um, you know what I mean.
Anyway, I was so a few days ago, and the object of desire was rice salad. But not just any rice salad, I just wanted the rice salad my mom used to do for our trips. So I called my mom. Unfortunately she did not know what she had done for a salad 15 years ago. But she has dictated the well-tried basic dressing recipe for all cases.
I only remember so much, ohhh mmmm ggggg !?
For me, this rice salad is the perfect summer salad. Like the 20-minute Tzatziki Pasta Salad and the brisk Caprese Pasta Salad he prepares himself wonderfully and waits patiently in the fridge until the picnic or the big barbecue starts. He is also wonderfully straightforward and gets a refreshing kick with vegetables and dressing.
Apropros vegetables. In addition to the wonderfully uncomplicated dressing of olive oil, balsamic vinegar, honey and salt, this gives the salad the finishing touch. We’re talking about crisp yellow peppers, cucumbers and juicy tomatoes. In addition, the nutty brown rice and neat dressing and you are catapulted directly into the taste sky!
Of course you can also modify the salad to your taste. How about, for example:
- Dried tomatoes
- Feta or mozzarella
- Red onions
- Fried chicken breast
- One Klacks Tzatziki
Highlight: This salad can be prepared perfectly! Simply chop the vegetables in advance and mix everything with rice and dressing. I then like to pack the vegetarian rice salad in tupper boxes or Mason Jars, so tightly closed it lasts a few days in the fridge.
And you know what? The salad tastes almost better on the second day! You can prepare it perfectly on the weekend and then during the week always, if you fancy a quick and super delicious rice salad, enjoy. Pretty clever, was not it? I’m sorry.

Vegetarian rice salad
Vegetarian rice salad with cucumber, yellow pepper, tomato, olive oil, honey and balsamico. Super easy and the hit on every BBQ party!

e.g. Long Grain Brown Rice
Cook the rice according to the instructions.
Meanwhile, in a large bowl of balsamic vinegar, olive oil, honey and salt, add a dressing. Season with pepper.
Cucumber dice. Free the paprika from the core and dice it. Halve the tomatoes, remove the stem and dice the tomatoes.
Giving vegetables to the bowl. Add the spilled rice and mix well. Enjoy.
The vegetarian rice salad stays airtight in the fridge for a few days.
If you do not have white balsamic in the house, you can also use dark balsamic.
