Do you know what to do on New Year’s Eve? eat there? I know, I know. Most of us do not even have the Christmas menu.

But New Year’s Eve is also a different twist.

We eat Raclette cheese on New Year’s Eve. So, of course, raclette.

You will not believe it, but we have four kilos of cheese planned this year. Four kilos on ten people. Makes lean 400 grams per person.

But we also have the master plan:

On New Year’s Eve, we prepare all the ingredients you could wish for. Boiled potatoes, vegetables, meat, fish, sauces and of course the cheese. Then we feast quite comfortably and the leftovers (please, please let it rest!) There is the next day again.

Acute laziness on New Year’s Day, you know.

This year we have my absolute favorite: Tarte flambée made of puff pastry.

The crispy snails taste like miniature Tarte Flambée. Hearty, spicy and perfect with a glass of sparkling wine.

After all, on New Year’s Eve, nobody should be left stranded and I think we can treat ourselves to the new year with a noble droplet.

I poured myself a glass to the Flammkuchen snails 2012 Cuvée VAUX brut .

And what can I say. This sparkling wine. Hach. In combination with the crispy snails, the droplet tastes just wonderful. Fruity, a bit like melon and apricot.

Hearty, spicy and unbelievably crispy – the Flammkuchen snails are the perfect finger food for the holidays. Enjoy the fast appetizer with a glass of sparkling wine or as a simple appetizer.

Flammkuchen snails + a sparkling raffle

Ingredients

  •   100
      g
     Schmand
  •   2
      shallots
  •   1
      package puff pastry
  •   50
      g
      Ham
  •   Grated cheese

Instructions

  1. Oven on Preheat 180 degrees. Cover baking tray with baking paper.

  2. Season Schmand neatly with salt and pepper. Finely chop the shallots.

  3. Brush puff pastry with sour cream. Distribute the ham cubes and shallots generously.

  4. Roll up puff pastry from the long side. Cut into two-centimeter-wide pieces and spread on the baking tray. Sprinkle with some grated cheese.

  5. Bake for 15 to 25 minutes, depending on the desired browning. Best served hot with a glass of champagne.
