Can someone please press the pause-head for a while? I mean, how is it possible that we have 2019? That the holidays are behind us and that we start the New Year with lots of beautiful, new plans and anticipation? Unbelievable, if you ask me!

What I really like about the new year: We are finally back on fresh, healthy recipes! And because Ms. Kochkarussell of course wants to knock out a bang at the beginning of the year, today I brought you the one and only Sweet Potato Pomegranate Power Bowl . Super easy, packed with vitamins and wonderfully fresh and crispy.

People, this Bowl is the tastiest start to the new year everrr. So, let’s get started!

First things first: I always think the simpler the recipe, the better. Like this Bowl for our New Year’s hunger for fresh. Basically, you just have to prepare exactly two things for the sweet potato pomegranate Power Bowl, the sweet potatoes and the sauce! Mix the sweet potatoes with olive oil, salt and paprika powder and bake them in the oven nice and crispy. For the sauce you stir your honey, mustard, oil and balsamic vinegar and taste the whole thing with salt, fertisch. Now you are still snipping an apple, washing the salad and get your pomegranate and pine nuts, you can do the whole thing.

And you know what? I bet you would not have expected the taste of the hammer with so little effort. It all starts with a delicate base of baby spinach leaves. On top of that, we are piling up the deliciously crunchy, on the inside creamy-soft oven-roasted sweet potato cubes and crunchy apple pieces. The chopped pistachios provide for bite, the pomegranate seeds for sweetness and acidity at the same time. In addition the ultra creamy honey mustard dressing because always goes and connects the individual ingredients perfectly.

Hachihach, very big sweetie-call alarm I tell you. Or in a nutshell: This Bowl is our great big New Year’s love. So get there. 😉

Sweet Potato Pomegranate Power Bowl

The Sweet Potato Pomegranate Power Bowl is healthy, fresh, made fast AND really good! Perfect as a satisfying yet light dinner.

      Sweet paprika

      Olive oil

      ml
      Balsamic

      Honey
  •   20
      g

     Intermediate

      big handful
      Baby Leaf Spinach
  •   1
      Apple
      Sweet-sour, eg Braeburn
  •   1
      Handful
      pomegranate seeds
  •   15
      g
      chopped pistachios
  •   Salt & Pepper

Instructions

  1. [ 19459001] Preheat oven to 210 degrees upper-lower heat. Cover a baking tray with baking paper.
  2. Peel sweet potato and cut into bite sized cubes. Mix with the paprika powder, 1 tablespoon of olive oil, salt and pepper and spread on the baking tray. Bake for 30 minutes.

  3. In the meantime for the dressing mix the remaining oil, balsamic vinegar, honey and mustard. Season with salt and pepper.

  4. Just before serving spinach spinach and spin dry. Wash the apple, core it and dice it. Spread the spinach on two plates, then top with sweet potato cubes, apple pieces, pomegranate seeds and pistachios. Finally, sprinkle with honey-mustard dressing and enjoy.

You can combine the Bowl super with a filling supplement, such as millet or quinoa.
