Do you like stuffed peppers? I have a split relationship with that.

On the one hand, I love the hearty combination of sweet paprika and spicy hack. The smell when the peppers stew in the oven, mhhhm. But honestly, I’m usually too lazy for that. Luckily I found the perfect alternative for that.

May I introduce: Stuffed Peppers Soup . It’s as delicious as our beloved childhood classic, but only half as complicated. Jackpot!

On one of our first dates Mr. Kochkarussell and I made stuffed peppers. Surely you are not surprised that I could eat almost nothing of it. The excitement, you know … But they were undoubtedly delicious and are definitely part of our culinary love story. If that is no reason for a culinary reinterpretation.

Very briefly in advance: This soup tastes exactly like stuffed peppers. But it’s SO much easier.

The stuffed paprika soup is based on colorful peppers, carrots, tomatoes and onions. The vegetables are sautéed in olive oil for a few minutes, then the minced meat is allowed in the saucepan. The whole thing is blotted with beef broth, then add a few spices, and tomato paste. For even more heartiness and a wonderfully satisfying soup cooks at the end with a portion of rice.

Done is your thick, hearty stew of the extra class, which catapulted you directly back into your childhood.

Also super practical: I like to cook the soup in the evening. So I just have to warm them up the next day and have a really good, satiating lunch or dinner ready.

Incidentally, the soup is also great for No desire to cook Freeze your days. Is finally always very reassuring to know that in the freezer still at least a decent dinner waiting for you, wa? Stuffed Pepper Soup

Stuffed Pepper Soup is the perfect alternative to stuffed peppers with peppers, minced meat, tomatoes, carrots and rice. Only half as elaborate, hearty and fast!

Ingredients

      red yellow and green

      Carrot
  •   1
      Tomato
  •   1
      Onion
  •   2
      EL
      Olive oil
  •   500
      g
      mixed organic minced meat
  •   850
      ml
      Beef broth
  •   2
      EL
      Tomato paste
  •   1
      TL
      dried thyme
  •   1
      TL
      dried rosemary
  •   170
      g
      Rice
  •   Salt & Pepper

Instructions

  1. Peppers core, peel the carrot and onion, halve the tomato and remove the stalk.

  2. Chop the peppers, carrot and tomato, finely chop the onions.

  3. Heat olive oil in a large saucepan on a medium heat. Add the diced vegetables and onion and sauté for 3-4 minutes.

  4. Add minced meat and cook with occasional stirring. Douse with the beef broth, stir in the tomato paste and simmer for 2 minutes.

  5. Add rice, thyme and rosemary and simmer until rice is cooked.

  6. Season with salt and pepper and enjoy hot.

Mia’s Tips

When the soup is a bit longer, the rice absorbs a lot of liquid. I’ll just add some water or broth.
