This recipe is incredibly simple: you only need 9 ingredients , 1 pot and 20 minutes time!
The pasta is based on spaghetti and a truckload of colorful tomatoes. For the summer kick you do not overcook the tomatoes to sauce, but mix them with a light marinade of olive oil, garlic, basil strips and Parmesan cheese. This allows tomatoes and pasta to soak up wonderfully, while we make ourselves comfortable in the sun. Finally, season it with a little lemon juice, salt and pepper, done.
Does not that sound easy? Here was the noodles yesterday and guess what’s on the menu again tomorrow? Exactly, summery Pastaparteeey.
In addition, the pasta with tomatoes and basil has another, all-important advantage: you just have to cook the noodles!
Yep, no hours of simmering the sauce and no pan that needs to be washed off. For the sauce, you simply mix all the ingredients in a large bowl. Once the noodles are done, add them and let them soak in the sauce. That’s it, the brisk dinner is saved.
Of course you can pimp the noodles even further. A few ideas:

Meanwhile, in a large bowl, mix tomatoes, olive oil, chopped garlic and basil. Generously with chilli flakes, salt and pepper to taste.
First add lemon juice and Parmesan, then fold in the noodles. Season again to taste and enjoy.
