Potato salad with anchovies, tomatoes and avocado

What was the last really crazy dish you cooked? Maybe pasta with chocolate sauce or cake with bacon? For me it was definitely the potato salad with anchovies, tomatoes and avocado . So it’s not like the typical potato salad, is it? But I can tell you, dear ones, the combination of spicy anchovies, melted tomatoes and creamy avocado is just heavenly!

As a dessert to this extraordinary creation there were marshmallows with pears , Deliciously melted marshmallows in the oven, which include a layer of cinnamon pears. This treat is reminiscent of campfires and marshmallows on a spit!

All participating bloggers received a package with ingredients for the challenge. My package included potatoes, crème fraîche, spring onions, tomatoes, avocado, anchovy fillets, parmesan, marshmallows and a pear. From these ingredients you then had to cook one or two dishes without adding any ingredients except spices. What an exciting challenge! I’ve been working on it for a long time, without the challenge I would never have come across these deliciously crazy recipes.

Potato Salad & Marshmallows with Pear

Ingredients

  •   3
      medium-sized potatoes
  •   1
      good tablespoon cream fraiche
  •   200
      g
      Tomatoes
  •   1
      EL
      Olive oil
  •   2
      Spring Onions
  •   1
      small glass of anchovy fillets
  •   1
      Avocado
  •   1
      Handful of Marshmallows
  •   1
      Pear
  •   1
      Pinch
      Cinnamon

Instructions

  1. Cleaning potatoes and cook with shell

  2. In the meantime, sauté the tomatoes and fry in the olive oil for two minutes. Cutting the spring onions in small rolls

  3. Mixing the olive oil from the pan with the crème Fraîche, salting and pepper

  4. Cut the potatoes into small cubes and add the spring onions and carefully stir the tomatoes under the sauce. Pluck anchovy fillets into pieces and fold

  5. Preheat oven to 100 degrees

  6. Cut marshmallows into 1-centimeter-wide strips. Core and slice the pear

  7. Cover two small molds with a layer of marshmallows. Spread the slices of Brine on top and sprinkle with cinnamon

  8. Bake in the oven for about 7-10 minutes until the marshmallows are nice and slightly browned. Instant warm enjoy
