Penne with fried zucchini and lemon

I love Italian food. A bit of pasta, a bit of vegetables and a good portion of grated Parmesan, we feel like we are in a nice restaurant in Bella Italia!

And because I feel like vacationing (I just say Sardinia, wuuuhuu!) Today there are penne with fried zucchini and lemon . Simple, fast and refreshingly lemony – the perfect after-work dinner.

The recipe is an original creation of the brand “Oops, why did I take lemons, I wanted to buy limes!”.

It’s not like I’m forgetful. Let’s say that we are more enthusiastic! At the grocery store around the corner there is just such a great selection that I can not help but hoping happily between the displays back and forth. There is something left behind on the track … But how do you say so nice: a bit of fading is always.

Also, without my forgetfulness, I might never have encountered this great combination. The best part of the recipe: you only need four ingredients for the penne. Pasta, zucchini, lemon and Parmesan, you have everything together for a large portion of Italian comfort food.

The penne with zucchini and lemon definitely belong in the category quickly and easily . While the noodles are cooking, you have enough time to turn the zucchini into thin zucchini slices and saute them in neat olive oil. Lemon juice and lemon zest give the dish a fresh note. A little tender melting cheese, you’re already finished.

Quick After-Work Kitchen {Penne with Fried Zucchini and Lemon}

  Portions : 2 Large Portions

  •   250
      Penne or other noodles
  •   2
      medium-sized zucchini
  •   3
      Olive oil
  •   1
      Organic Lemon
      Abrasion and Juice
  •   at least
      50 g Grana Padano or Parmesan
  •   Salt & Pepper


  1. Pasta to cook al dente.

  2. In the meantime, cut zucchini with a vegetable slice into very fine slices.

  3. Heat olive oil in a large pan. Fry the zucchini slices in medium heat for 4 to 5 minutes. Turn now and then to allow all zucchini slices to cook.

  4. Add the lemon and lemon juice to the zucchini and season with salt and pepper

  5. Add the spilled noodles to the zucchini and mix well.

  6. Add grated cheese, season with salt and pepper again and enjoy immediately.
