Ingredients

      Garlic Cloves

      Mango
  •   1

      Coconut oil
  •   400
      g
      Chopped Tomatoes
  •   250
      ml
      Coconut Milk
  •   1
      can chickpeas
  •   1 1/2
      TL
      Garam Masala
  •   2-3
      TL
      Curry
  •   1
      TL
      Cumin
  •   salt
      Pepper and chilli

Instructions

  1. Rice cook according to the package instructions.

  2. Peel onion and garlic and finely chop. Peel mango and cut into bite sized cubes.

  3. Heat oil in a large pan. Add garlic and onions and let it turn glassy. Put chopped tomatoes and coconut milk in the pan and simmer for 5 minutes.

  4. Add drained chickpeas and simmer for 10 minutes. Add spices, then simmer for another five minutes and fold in mango cube.

  5. Season with salt, pepper and chili, then serve with rice and fresh coriander.
