Potato Power Bowl with Garlic Olive Oil Dressing

This simple recipe is packed with arugula, tomatoes, feta and the creamiest dressing. Great summery and fast!

Instructions

  1. Preheat the oven to 220 degrees upper-lower heat. Wash the potatoes, cut into bite-sized pieces and mix with 20 ml of olive oil. Season with salt and pepper, then place on a baking sheet and bake for 25-35 minutes until the potatoes are golden brown and crispy.

  2. In the meantime, wash and halve the tomatoes, wash the rocket and spin dry.

  3. For dressing, place all remaining ingredients with 2 tbsp water and 1 tsp salt in a blender and mix until the dressing is deliciously creamy.

  4. In large bowls first pile the rocket, then potatoes and tomatoes and serve with the dressing.
