Very short. Last week, when I posted a behind the scenes photo from the shoot of Greek baked potato with yogurt feta dip on Instagram, you’re almost flipped out. My mailbox has not stopped flashing and every time I’ve just answered a message, there are already two new ones.
That means: You NEED this recipe. Friends, today you get it!
Before that you have to let it melt on your tongue again. Greek baked potatoes with lemon juice, neat garlic and oregano. Deliciously crunchy from the outside, soft and creamy from the inside and dipped in a cool yoghurt feta dip with finely crumbled feta and dill.
Oh yes, this is after-work Soulfood deluxe!
You must know, the Greek baked potato with yoghurt feta dip is about the simplest recipe in the world. All you need is:
- Potatoes. I like to be festboochende.
- Olive oil.
- Juice from a lemon. This will make the potatoes refreshing and get extra much greece flavor.
- Oregano. A high on this magic spice.
- Natural yoghurt. A light base for the dip.
- Dill. I took TK-Dill because I did not have any fresh food in the house right now. That’s great.
- Feta. Delicately finely crumbled and salty-spicy perfection.
First you mix the diced potatoes, olive oil, lemon juice, garlic, oregano, salt and pepper in a large bowl … [ 19459003]
… Then you distribute the potatoes on a baking sheet and let them cook in the oven for about 40 minutes.
Meanwhile, you take care of the dip. For this you mix yoghurt, dill, crumbled feta and salt and pepper. Finished. Now you have more than half an hour for you. You can finally read the book you have been looking forward to for so long. Or hang up the laundry. Or watch a episode at Netflix. Or just do nothing. Glorious.
And as soon as the alarm rings, the most delicious after-work recipe ever awaits you. I mean, look at this tin of golden brown, deliciously crunchy baked potatoes. The yoghurt-feta dip and maybe a light cucumber salad and your dinner is something of safe.
Let me summarize the merits of this brisk oven recipe for you once more.
