Hand on heart: Have you all Christmas presents together? No? I’m relieved! Here was the Christmas time this year beautiful, but also turbulent and a tad bit stressful. That’s why there are a few more points on my pre-Christmas to-do list:

In order to do this in addition to the normal program in six (waaaah!) Days, it must be in the kitchen go fast right now. But luckily I have a delicious ace up my sleeve: Gnocchi with mushrooms and Parmesan . Also known as 20-minute Soulfood!
Ok friends. We’re talking about crispy, golden-brown gnocchi. There are also onions and mushrooms stewed in olive oil. And best of all, the gnocchi are done incredibly fast!
Mine I just cooked for three minutes, poured off and then combined with their best buddies mushrooms and onions in the pan. A dip in good olive oil later, the gnocchi are wonderfully crispy on the outside and wonderfully soft on the inside, exactly as I imagined. As a coronation, I’ve treated the whole thing a decent portion of Parmesan, with cheese tastes EVERYTHING better.
And what I wanted to ask: How do you think about olive oil?
For me, olive oil is the absolute go to oil that I use in 95% of cases. Yes, also for roasting. It’s like this: The rumor that olive oil would not be suitable for frying is definitely not true! Especially in the super healthy Mediterranean diet is used almost exclusively olive oil for cooking and frying – so you do not have to worry.
The important thing is that the olive oil does not start to smoke. As a rule of thumb, virgin, cold-pressed olive oil tolerates temperatures up to 180 degrees, refined olive oil even temperatures up to 210 degrees.

Gnocchi with mushrooms and Parmesan
Gnocchi with mushrooms, parmesan and fresh rosemary. Only six ingredients and 20 minutes are needed. So fast and delicious!

fresh or from the refrigerated counter
Gnocchi on prescription or pack instructions in plenty of salted water. Drain and set aside.
Meanwhile peel the onion and finely dice it. Clean the mushrooms and cut them in slices.
Heat the olive oil in a large pan and cook the onion cubes for one minute. Add the mushrooms and fry for about 5 minutes until the mushrooms are crispy.
Add rosemary and gnocchi and fry until golden brown and slightly crispy.
