You know that when you read what you wrote a few years ago. And just thinking: Ok wow, what did I think? That’s how I started with this phenomenally good, simple western pan. Should I show you? Ok, but please do not laugh too loud:

I think campfires are really romantic! Maybe this is a tiny bit of my stuffy self, but sitting on a balmy fire over a crackling fire on a balmy summer night looking out at the starry sky is just incredibly romantic! Add a little bit of guitar strumming … When the fast western pan sinks into a big cauldron, then I’m finally in the campfire heaven!

I mean, I still think campfires are cool. And this pan is the absolute hammer. But the introduction is so schmaltzy that I had to update this post IMPERATIVE for you. So, let’s go!

The most important thing first. What I love most about this recipe is definitely the simplicity.

  • The only things to do are 3 onions. YAY!
  • The remaining ingredients are in the fridge (eggs, tomato paste) and in the pantry (corn, kidneys, white beans, oil and spices)
  • The ingredients are gradually added to the pan , finished.

After 20 minutes you will be rewarded with a delicious hearty pan of low carb soulfood. And best of all, if we are honest, low carb recipes are often not really full. The Westerpfanne is definitely full and happy!

Oh, before I forget it. You can of course also change the pan to your taste. I like to take black beans or chickpeas for it, for example. Instead of tomato puree, the spicy paprika paste Ajvar is excellent and seasoning you can absolutely let off steam. Pro tip: Thick Fetakrümel on top put this baby on the well deserved crown.

Ingredients

  •   3
      Onions
  •   1
      EL
      Sunflower oil
  •   1
      Tin
      Kidney Beans
  •   1
      Tin
      white beans
  •   1
      Tin
      corn
  •   1
      TL
      Sweet paprika
  •   1 1/2
      TL
      dried oregano
  •   3
      EL
      Tomato paste
  •   Chili flakes
  •   2
      Eggs
  •   Salt & Pepper

Instructions

  1. The Dice the onions and fry in a large pan in oil over medium heat for about 3 minutes.

  2. Drain the kidney beans, white beans and corn and add to the onions in the pan.

  3. Season with paprika, oregano and chilli. Add the tomato paste and fry for a few minutes over low heat.

  4. Beat the eggs in the pan and stir well until the eggs are stiff.

  5. Season with salt and pepper, add a little more if necessary.
