I love Summer Rolls. There is only a tiny problem. So far, I thought the crisp roles would be super elaborate. And complicated. And definitely not for Schussel like me.

Fast Summer Rolls with peanut sauce made from four ingredients.
You’ve probably eaten Summer Rolls, right?
The delicious rolls are packed with crunchy vegetables, fresh and really tasty. In addition, there is in the restaurant like a creamy peanut sauce.

Fast summer rolls with peanut sauce are:

All you need for the Summer Rolls with peanut sauce is a bunch of vegetables in thin strips and ingredients for the peanut sauce.
For The Peanut Sauce, to be exact. I’m crazy about this sauce! Creamy, spicy and full of peanut flavor – if the Summer Rolls have not convinced you, then this sauce will do it.
Rice paper * and Srirachasauce * can be found in the well stocked supermarket or in the Asialaden your trust.
1. Cut vegetables into thin strips
You can really let off steam with vegetables. I chose carrots, cucumber, peppers, lettuce and avocado. Red cabbage and cabbage are also perfect. Fresh spices such as parsley, coriander and mint give your summer rolls the final kick.
Important: Slice the whole vegetables into thin strips before you start rolling. So you have all the ingredients ready and can start right away.
2. Rice paper
You fill a large pan with hot water and put in a sheet of rice paper. After about 20 seconds, the rice paper is malleable and you lay the paper smoothly on a clean work surface.
Now it’s time to fill up. For this you place carrots, cucumber, peppers, lettuce and avocado on the bottom third of the rice paper. At the sides you leave at least 1.5 cm free.
Fill the Summer Roll with less ingredients and gradually increase. So you make sure that you can roll the Summer Rolls well.
3. Rolling Summer Rolls
First, fold the left and right sides of the rice paper into the middle. Then you close the role firmly from below with the bottom side. Now roll up the roll like a taco. Make sure that you roll as tight as possible, so that the Summer Roll does not fall apart again.
As often happens: Practice makes perfect. Do not give up when the first rolls still look a bit awkward. That will!
4. Peanut Sauce
Peanut butter, soy sauce, Sriracha sauce and ginger pieces mix well with each other for the four-ingredient peanut sauce. If the sauce is still too firm, you can stretch it with a sip of water. Finished!

Fast Summer Rolls with Peanut Sauce of Four Ingredients

Carrots peel. Cut carrots, cucumber and pepper into thin strips. Cut salad and avocado into slightly wider strips.
Fill a large pan with hot water. Put the rice paper in the water and let soak for about 20 seconds. Place on a large board or a plate. Fill the Summer Roll. Place carrot, cucumber, pepper, lettuce and avocado on the lower third. Leave at least 1.5 cm on all sides. Now fold down the left and the right side, then fold up the lower side and roll it up tightly. Pictures and detailed instructions above.
For the peanut sauce, mix the remaining ingredients.
Serve Summer Rolls with Peanut Sauce or refrigerate until served.
