Peanut Butter Crinkle Cookies

  1. Egg Mix peanut butter, butter, sugar, cane sugar and vanilla extract in a large mixing bowl. Mix with a hand mixer for about three minutes to a smooth creamy dough

  2. Add flour, baking powder and salt and stir at low speed for one minute. The dough should now be nice and soft

  3. Divide the dough into 12 equal portions and shape each into a ball. Gently flatten the balls with two fingers and place them on a large plate. Wrap with cling film and place in the refrigerator for at least two hours. The dough must be chilled, otherwise the cookies will run dry

  4. Preheat the oven to 175 degrees. Cover two baking trays with baking paper

  5. Roll each dough ball well in sugar and place it with plenty of space on a baking tray. I bake 6 cookies per plate, as the dough rises very well during baking

  6. Place 5 mini marshmallows on the sugar-rolled dough ball and lightly press

  7. Bake the cookies for about 10-11 minutes. After 9 minutes, the cookies start to crack. The cookies must not be too dark, otherwise they will be hard. Do not worry that the cookies might be too soft, they harden when they cool down. When they come out of the oven, the edge should be tight and the top surface should be very tight.

  8. Well kept cookies in a can hold 4-5 days
