Divine Peanut Butter Crinkle Cookies with Mini Marshmallows

Calorie counters have to shut their eyes and ears. These cookies are not for those who want to lose weight, but they are so soft, peanut buttered and marshmallow tastic that you simply can not resist them.

With the Peanut Butter Cookies with Mini Marshmallows you can not only beam yourselves into the seventh Cookie-Sky, they are also wonderful as a souvenir for dear friends or as a Mother’s Day present for the best Mum of the world!

The Peanut Butter Cookies are so good that they are all washed away. Mr. Kochkarussell has done a great job. But it’s no wonder that cute mini marshmallows literally melt into the cookie dough and give him lots of sweet kisses. Who could say no to that?

Incidentally, yesterday, a small mishap has been made. After the two hours of cooling I flossed all the dough balls into sugar and … Oops, why does the sugar actually stand in its proper place? Did not I just bathe the cookies? SHIT! Since I have grazed in my vigor but smooth to the salt glass. Yeah, so much for the topic “salt instead of sugar, what happens to something like that?!?”. The end of the story was that the Cookie Rescue Maneuver has degenerated into a fun batter bath party. Can you do it, but I do not have to have it more often now. Thank God, the taste did not detract, phew!

Do not be surprised that the cookie dough is relatively soft. This consistency ensures that the cookies are flat and large, while remaining nicely soft. As the dough rises while baking, but then collapses again, the delicious crispy cracks develop. Even if you can not wait to finally nibble the first cookie, the dough must be cooled. Cooling prevents the cookies from converging into a single thin giant cookie when baking.

  •   Sugar for rolling biscuits
  •   60
      Mini Marshmallows
      circa 2 handful

Instructions

  1. Egg Mix peanut butter, butter, sugar, cane sugar and vanilla extract in a large mixing bowl. Mix with a hand mixer for about three minutes to a smooth creamy dough

  2. Add flour, baking powder and salt and stir at low speed for one minute. The dough should now be nice and soft

  3. Divide the dough into 12 equal portions and shape each into a ball. Gently flatten the balls with two fingers and place them on a large plate. Wrap with cling film and place in the refrigerator for at least two hours. The dough must be chilled, otherwise the cookies will run dry

  4. Preheat the oven to 175 degrees. Cover two baking trays with baking paper

  5. Roll each dough ball well in sugar and place it with plenty of space on a baking tray. I bake 6 cookies per plate, as the dough rises very well during baking

  6. Place 5 mini marshmallows on the sugar-rolled dough ball and lightly press

  7. Bake the cookies for about 10-11 minutes. After 9 minutes, the cookies start to crack. The cookies must not be too dark, otherwise they will be hard. Do not worry that the cookies might be too soft, they harden when they cool down. When they come out of the oven, the edge should be tight and the top surface should be very tight.

  8. Well kept cookies in a can hold 4-5 days
