Ok, I Believe Corn salad with fried mushrooms, pomegranate, feta and walnuts is the longest recipe ever. But: I just could not decide which ingredient to skip.

Because I mean, mushrooms, crunchy pomegranate seeds, creamy feta and walnuts are in and of themselves extremely tasty and absolutely worth mentioning. But all together on a bed of tender lamb’s lettuce? Friends, that’s what I call taste explosion in its purest form. Crunchy, creamy, crunchy, nutty, hearty, sweet – with this lettuce our taste buds spin with joy.

     Medium heavy

      Pomegranate

      Walnut kernels
  •   Salt & Pepper

Instructions

  1. [ 19459001] Peel onion and slice. Clean the mushrooms and cut them in slices. Wash corn salad and spin dry.
  2. Heat 1 tbsp of olive oil in a large pan. Fry the onion and mushrooms until crispy for about 10 minutes, stirring regularly. Salting and peppering.

  3. Meanwhile mix the remaining olive oil, balsamic vinegar, honey and mustard into the dressing. Season with salt and pepper.

  4. Spread lamb’s lettuce, mushrooms, pomegranate seeds, feta and walnuts over two plates. Drizzle with dressing and enjoy.
