Instructions

  1. Carrots Peel and cut into very thin slices. Peel onion and ginger and finely chop.

  2. Heat olive oil in a large saucepan and fry the vegetables over medium heat for a few minutes. Add garlic and fold in. Sprinkle with curry and sauté for 2 minutes.

  3. Fill the vegetables with coconut milk and vegetable broth. Stir in the peanut butter and bring to a boil. Reduce the heat and simmer for 20 minutes with the lid slightly open.

  4. Puree the soup to the desired consistency. Season with Srirachasauce, salt and pepper.
