Yesterday, the man and I went for a walk during lunch and you know what? It was so warm that I had to take off my jacket. You might think now Okeee Mia, exciting info, but what can that tell us? Quite simple, ma friends. If even I aka Frostbite No. 1, who in case of doubt prefers three shifts too much than one too few, voluntarily takes off her jacket, then it has to be really warm.
And do you know what’s just as safe on the mat right at the start of spring as the joy of the first warm rays of sunshine? The hunger for light, fresh salads and delicious bowls with lots of vegetables. THE keyword for today’s favorite recipe.
Just so you know, this Potato Asparagus Power Bowl with Fried Eggs is ♡♡♡! You could say that we decadently pound the best of spring into a bowl and crown it with a delicious creamy dressing with garlic and olive oil. Green asparagus, spicy rocket, fried champis, crispy potato cubes and a fried egg, everything is drizzled with the dressing and old father, so spring has to taste!

It all starts with potatoes that leave them golden brown and crispy in the oven. Meanwhile, fry the green asparagus in a little olive oil, so it is deliciously crunchy and flavorful. After that, you breed brown champignons in the same pan and finally Fried Eggs , where the yolk runs perfectly creamy over the remaining ingredients.
Sounds damn good, right?
What makes the whole thing absolutely perfect is the sauce! Olive oil, dried herbs, a small clove of garlic, salt, sugar and Balsamico Bianco are briefly perfused with the blender and you get the most creamy, delicious sauce you can imagine, based on the dressing of Italian Potato Power Bowl .

Bombastic Potato Asparagus Power Bowl with Fried Eggs
The Potato Asparagus Power Bowl is SO GOOD! This simple and healthy recipe tastes great and is perfect for spring!

[ 19459001] Preheat the oven to 220 degrees upper-lower heat. Wash the potatoes, cut into bite-sized pieces and mix with 20 ml of olive oil. Season with salt and pepper, then place on a baking sheet and bake for 25-35 minutes until the potatoes are golden brown and crispy.
In the meantime, wash the rocket and spin it dry, wash the asparagus and cut off the dry ends, clean and slice the mushrooms.
Heat 20 ml of olive oil in a pan. Roast the asparagus for about 5 minutes from all sides. Remove from the pan and fry the mushrooms for 3-5 minutes, turning in between. Use a spatula to push aside and beat the eggs into the pan. Fry over medium heat.
For dressing, add the remaining ingredients with 2 tablespoons water and 1/2 teaspoon salt to a blender and mix until the dressing is deliciously creamy.
In large bowls first pile up the rocket, then potatoes, asparagus, mushrooms and fried eggs and serve with the dressing.
