Green asparagus in strip form is the new hot shit.
Ok, the idea is not that new at all, but until such trends arrive in the kitchen with me, it always takes a while, as everyone knows. Do you remember, for example, my beloved zucchini spaghetti ? At first I defended myself forever and three days against it. And then they absolutely blew me away. Well, that’s how it works sometimes, why?
Anyway, this Asparagus Strawberry Salad with Feta is the epitome of hot shit! Super easy, incredibly delicious and perfectly spring-like.
I would say that today’s dinner is saved. ?
First of all, I tell you why you must try the asparagus and strawberry salad with feta:
- It’s spring! And there’s nothing more springy than green asparagus and our beloved strawberries!
- He’s really doing something! Asparagus in wafer-thin strips is in itself a stunner. In addition to the bright red, juicy strawberries and the bright white feta and we are the heart at the first sight.
- It tastes good! I like to repeat myself: Green asparagus + strawberries + salted feta = THE hot shit. Sweet and hearty, creamy and crunchy and definitely super sweet! In addition, this modified dressing with white balsamic and honey, hachhachhach …
I can imagine the salad perfect for a nice dinner with your sweetheart. A good glass of white wine, maybe a few slices of crispy baguette, lovely.
The asparagus salad with strawberries and feta is also great for a picnic in the park or never next barbecue party. Especially if it’s not for once again pasta salad (ok, apart from 20-minute Tzatziki Pasta Salad and Caprese Pasta Salad , the go always) but a little easier, this delicious salad is super handy.
For this salad you only need 8 ingredients and 15 minutes time.
Asparagus and Strawberry Salad with Feta – Here’s how
It all starts when you slice the green asparagus into thin strips with a peeler. In theory, you could just take a knife, but with the peeler they are even finer. Next, roast the asparagus in olive oil for a few minutes. Meanwhile, you slice the strawberries and mix the dressing of olive oil, light balsamic vinegar, honey and poppy seeds. Now you mix everything in a large bowl and finally crumble the feta over it, the spring salad is ready.
Do not tell, but I just left the salad in the sun on the sofa a few days ago with the window open. So nice that we can finally have the window open all day without getting a cold right away.
I hope you will love this recipe!
