Friends, I failed. Pretty miserable, to be exact. You’ve probably noticed that I participated again in 2017 in the Veganuary . Mind you, have. Because somehow my body found the change this year not so cool and gave me to understand quite clearly that he just does not feel like it.

Do you remember my Veggie Bolognese ? The recipe I’m still expired today. The Bolognese with mountain lenses has only one tiny disadvantage: The lenses have to simmer for 25 minutes. And then there are the other ingredients … In terms of taste, this vegetarian alternative to the classic Bolo is definitely at the forefront. Only with acute cravings, the Veggie Bolognese is less recommended.
But fortunately there are red lentils. The small powerhouses are already peeled and therefore really fast – the perfect basis for vegetarian lightning bolognese.
If one takes it exactly, the Red Lentils Bolognese is even vegan . Means: As long as you do not crown the spicy sauce with an extra portion of Parmesan, you can also make your vegan friends full and very very happy.

Vegan Red Lentil Bolognese – Here’s how
All you need for this quick recipe is a handful of basic ingredients, red lentils and spices.
We start with a solid base for our Bolognese: onions, garlic, carrots and celery. Next are quick-cooking red lentils, simmering in vegetable broth and chopped tomatoes to the perfect Bolognese consistency. Then it goes to the spices. Oregano, chilli and paprika powder are set sweet, the rest you can vary quite to taste. Add a little salt and pepper, and you’re ready for a quick dinner.
Incidentally, I discovered the great recipe at the Küchenchaotin , which in turn at The Vegetarian Diaries [19459004 ] has found. The basic recipe comes from there, I have modified it only a little to my taste.

20-minute Red Lentil Bolognese
Red lentils Bolognese with carrots and celery. Vegan and finished in 20 minutes, unbelievably delicious.
Portions : 2
Calories per serving : 372 kcal
e.g. Oregano, basil, sweet paprika, chilli
- Salt & Pepper
Shallots Peel and finely chop garlic. Dice the carrot and celery.
Heat olive oil in a large pan. Briefly sauté shallots and garlic, then add carrot, celery, lentils and tomato paste. Sauté briefly, then deglaze with vegetable stock and chopped tomatoes.
Simmer for about 10 minutes until the lentils are cooked. Season with plenty of oregano, basil, paprika and chilli. Season with salt and pepper.
To enjoy spaghetti.
