Momentary view from my window: Gray sky, drizzle and stormy it still is. That would be completely ok, if we had just November. Or at least January. But friends, tomorrow is the official beginning of spring!
All we want today is sunshine and spring fragrance in the nose. Since the weather does not mean it so well with us in the next few days (I say only: rain, rain, rain), we need a master plan.
May I introduce: 15-minutes Gnocchi with spinach and peas . Soft gnocchi with fresh spinach and peas, panned in a light lemon / garlic / cream sauce and topped with fresh lemon zest.
Not too light, not too heavy and exactly what we want in spring.
Gnocchi ! How could we neglect them for so long? These little, fluffy things make us a rock star chef in four minutes. Of course, we could do it ourselves. But honestly. In the evening, after work? No thanks! We prefer to use a good version from the fridge.
So the basis for dinner is already there. Now all we need is a suspicious sauce. And because we are in the mood for spring-fresh flavors, ingredients and SPRING at all, we treat ourselves to a light cream sauce. With fresh lemon juice and lemon zest, because people. Nothing provides more freshness on the plate faster than the magic of a large organic lemon. Yeah, sometimes the best things are so easy.
Of course, the vegetables should not be neglected. Fresh spinach is wonderfully tender and the young peas crisp, deliciously sweet and delicious all around. A little garlic, finished your new favorite food. Seriously, this recipe is so good that it definitely deserves the title Spring Soulfood 2017. Just take the lemony cream sauce with garlic as a start and add vegetables to your taste. I think of, for example, ruccola, cherry tomatoes, broccolini or mushrooms. Gnocchi with spinach and peas – How it works
For the gnocchi with spinach and peas, add a chopped garlic clove, cream and frozen peas to a pan. While the sauce is simmering for five minutes in front of you, you cook the gnocchi in plenty of salted water al dente. Then you put the spinach in the sauce and let it collapse. Finally, you taste the sauce with lemon juice, lemon zest, salt and pepper and set aside the gnocchi – done!

Simple gnocchi with spinach and peas
Gnocchi with leaf spinach, peas and refreshing lemon juice. This recipe is fast, easy and packed with vegetables. Ready in 15 minutes.
Portions : 2 Persons
Calories per serving : 633 kcal
lemon juice + 1 teaspoon of lemon
- Salt and pepper
[ 19459001] Put chopped garlic, cream and peas in a pan. Simmer over medium heat for 5 minutes.
In the meantime, cook the gnocchi according to the packing instruction in salt water al dente.
Add the spinach to the sauce and let it collapse. Season with lemon juice, lemon zest and salt and pepper.
Fold in and enjoy the finished gnocchi.
